It is easy to lose track of time, especially when you're juggling what seems to be a million things but let's not forget about the last meal of the day, dinner. Crockpots are there to help us balance our hectic lives and then come home to a balanced, delicious meal without waiting... and it also leaves us with very little to clean up ๐Ÿ˜ that's the best part! 
Crockpot meal: Shredded chicken fajitas with bell peppers
2 pounds boneless chicken thigh 
1 1/2 tbsp chili powder
1 tsp ground cumin 
1 tsp paprika 
1/2 tsp garlic powder
1 tsp black pepper
2 tbsp soy sauce
2 garlic cloves, minced
1 1/2 cup cooked black beans 
1 whole white onion, sliced
3 red bell peppers, sliced
3 green bell peppers, sliced
Clean chicken thighs; remove fatty pieces. Add all dry seasonings to small bowl and combined then set to side. Take half of bell peppers and onions and place into crockpot, then place chicken thighs on top. Take seasoning and coat front side of chicken, then coat the back side of chicken. Add rest of onions and bell peppers then add the rest of seasoning and add soy sauce. Mix then place veggies on top of chicken. Cook at a low temperature for 6 hours or 3 hours on high. Once done add in beans and cover the lid and let sit for 20 mins. But in actuality, nutritional quality in fresh versus frozen vegetables depends on the type vegetable. Brussel sprouts in this case are better fresh than frozen because they can retain antioxidants, which has been suggested to prevent cancer. The reason some frozen fruits and vegetables are just as nutritional or even better than fresh is because at the time of harvesting a fruit or vegetable starts to release heat and loses water, therefore losing quality nutrient by the time you get to them. Researching which vegetables and fruits are better to buy frozen or fresh, can help you stay conscious about what you eat and can save you some green as well.
Fresh Roasted Brussel Sprouts
3 pounds brussel sprouts
3 tbsp olive oil
1 tsp kosher salt
Dash black pepper
Pre-heat oven at 425F. Toss brussel sprouts in olive oil, salt, and pepper and put in oven for 20 mins.

When hubby craves homemade hummus, hubby gets homemade hummus with a whole lot of VEGGIES ๐Ÿ˜๐ŸŒถ๐Ÿฅ•๐Ÿฅ’๐ŸŒถ๐Ÿฅ•๐Ÿฅ’๐Ÿฅ•๐ŸŒถ๐Ÿฅ’ I obviously don't shy away from veggies... Without them the meal is incomplete. Eating fresh vegetables have been proven to help increase metabolic activity, lower cholesterol, and decrease risk of heart disease. They are beneficial and tasty!! A win, win for everyone โคSo on that note, here's a recipe that pairs well with all the delicious veggies.
HOMEMADE HUMMUS
2 1/2 cup chickpea (garbanzo beans)
2/3 cup tahini (sesame paste) 
2 lemons
4 garlic clove
4 tbsp olive oil
1/2 tsp salt 
1/2 ground cumin
Dash ground pepper
Water (~ 1/2 cup)
In large processor, add chickpeas and blend until smooth. Add in tahini, garlic, lemon juice, and seasoning. As it processes add in olive oil until hummus is smooth. Add in water to loosen up the hummus. Do not need to add all of it, depends on how thick you want it. Top hummus with olive oil, fresh ground pepper, paprika, and oregano. Enjoy with veggies โค
*if you want hummus to be spicy, add in 2 tbsp Sriracha.

When you open up your fridge and see only veggies, I suggest you make a stir-fry! It's a win, win, win situation. My stir-fry consist of soft fried tofu, red sliced bell peppers, half a cauliflower head, mushrooms, green beans, and carrots topped with fresh sliced green onions cooked with a soy sauce, lime, red chili paste, water, and flour sauce. Throw that bad boy in two mins before everything is done and drop the top on it. When I walk into a grocery I don't always know what I'll be making that night or even for the following nights. There is some type of inspiration that comes to me when I see all the bright colors of all the vegetables sitting there waiting to be made into something yummy and delicious. Have you ever had a food idea from somewhere and you've said to yourself "I can make this?" I had this happen to me the other day, going to Starbucks and ordering their turkey pesto panini for a quick on the go lunch and realized that I could make that sandwich at home. My sandwich was a vegetarian rendition of it, filled with roasted peppers, homemade pesto spread, tomatoes, and melted hand sliced mozzarella all in between a nice telera roll ๐Ÿ˜‹๐ŸดBut what I would really like to share with you today is a simple little recipe for zucchini fries ๐ŸŸ just in time for Super Bowl! 
Easy Baked Zucchini Fries
3 large zucchini, cut in 1/2 inch thick slices
1 cup panko bread crumbs
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp oregano 
Dash of red chili peppers 
Pinch of salt and pepper
2 eggs
1/2 tsp flour
Preheat oven at 425F. 
In large bowl, add all the cut zucchini then add flour and toss to coat zucchini evenly. In a small bowl, beat eggs and put to side.
On large plate, add panko and seasonings then take fork and mix well. Dip zucchini in egg then toss in breading mixture. Place onto baking sheet and bake for 35 mins. What do you do with your Mexican night leftovers?! I used it for my rendition of the Chipotle bowl: a bowl that is filled with delicious goodies of your liking ๐ŸŒฎ๐Ÿ’ƒ๐Ÿป๐Ÿด On this one, I layered the bottom with a bed of fresh crisp kale, cilantro black bean brown rice, and grilled sweet corn and topped it all off with diced avocados, fresh roma tomatoes, and plain Greek yogurt instead of sour cream!
