I finally made granola bars 😍🍴They aren't perfect but they are absolutely DELICIOUS! All natural, no artificial flavors, or preservatives. What I really like best about this recipe is that you can add whatever you desire into these bars. I had peanuts, almonds, cranberries, roasted unsweetened shredded coconut, flaxseeds, and chocolate chip lying around and decided it would go great with this granola bar. Hope y'all enjoy this recipe ♥️
The Heathy Granola Bar
-The base-
2 cups Old Fashion Oats
2 tbsp extra virgin coconut oil
1/2 cup all natural, no salt added peanut butter
1/3 cup raw honey
1/4 tsp baking soda
1 1/2 cup dark chocolate chips
Dash sea salt
**The add-ons**(optional)
1 cup chopped almonds
1/2 cup raw crushed peanuts
2 tbsp cranberries
1/3 cup shredded coconut shredded 
2 tbsp flaxseed 
Preheat oven at 300F. In a small bowl, add in oats with a pinch of salt and two tbsp olive oil. Mix and place on baking pan then spread evenly. IF you're using any types of nuts, I recommend to roasted them with oats but there's no need to add oil or salt on nuts. Place in oven for about 20 mins or until the oats are golden.
In microwaveable bowl, add in peanut butter, coconut oil, and honey microwave for 45 secs then mix well. 
Add mix to larger bowl then when oats and nuts are cooled add into bowl with other ingredients except for chocolate chips and mix evenly. 
In a 8in square baking pan, add lining of parchment paper and then evenly add chocolate chips to the bottle of pan. Add granola mix and spread evenly out on pan. Then add another parchment paper layer on top of granola and use a flat surface item to press down granola. 
Once evenly pressed remove top parchment and place the pan into the oven for 25-27 mins. Use toothpick to check for readiness. If nothing sticks other than chocolate, the granola is done. Let cool for at least 30 mins before eating or cutting. Then enjoy it as an afternoon snack or place into your kid's lunchbox! Any way you have it, I hope y'all enjoy ♥️ #foodsharingwithkim

Growing up Vietnamese American has taught me to embrace both cultures, especially in the world of food. I love taking the recipes I grew up with and making my own rendition. Tonight's dinner is a Vietnamese grilled tomato, usually stuffed with pork, I used a shrimp paste my mom taught me. Adding to this dish, a nice crispy vegetable crunch by using watercress and tofu to fluff up the dish. Summer is here 🌞 and although, I'm taking summer courses I am determined to cook more often and share my recipes! Here's a good one to start summer off right!
HOMEMADE HUMMUS
2 1/2 cup chickpea (garbanzo beans)
2/3 cup tahini (sesame paste) 
2 lemons
4 garlic clove
4 tbsp olive oil
1/2 tsp salt 
1/2 ground cumin
Dash ground pepper
Water (~ 1/3 cup)
In large processor, add chickpeas and blend until smooth. Add in tahini, garlic, lemon juice, and seasoning. As it processes add in olive oil until hummus is smooth. Add in water to loosen up the hummus. Do not need to add all of it, depends on how thick you want it. Top hummus with olive oil, fresh ground pepper, paprika, and oregano. Enjoy with veggies ❤
*if you want hummus to be spicy, add in 2 tbsp Sriracha.

Last night was really something special. It helped everyone from PPA (Pre-Pharmacy Association) reflect on everything that happened through out the year, honor those who go above and beyond, and help us end the year with a bang! Nice and easy, that's how weekends are supposed to be but with finals around the corner those weekends will just have to wait. For tonight's dinner, we kept it simple with a light chicken Mediterranean salad containing romaine lettuce, kalamata olives, red onions, tomatoes, mint, and marinated grilled chicken topped with feta cheese and cracked black pepper 🍴😊 tasty and simple. When the weather changes from humid and in the 80's to being a cool, crisp 60 all in one day, you find yourself looking for a nice bowl of something to warm you up. Vegetable noodle soup is my go to on days like this. This bowl of delish soup consist of tender broccoli, green beans, cubes Yukon potatoes, brightly colored carrots, and quartered sweet corn on the cob. Good empanadas are really hard to come by. Fortunately for me I have had my fair share of delicious empanadas and hands down THE BEST are the ones that are baked! My favorite still are Chilean empanadas but I stumbled across this place that makes delicious, in-house baked empanadas in Irving called Argentina Bakery. Happy Good Friday everyone! It has been THE longest lent ever! It has felt like years since I've had coffee and I'm so glad that tomorrow I can finally have it again 😊☕️ I hope everyone enjoys their weekend and enjoy this recipe! 
Egg noodle veggie delight 
4 cups egg noodles
2 cups snow peas
One cup sliced cabbage 
2 large carrots julienned 
2 celery stalks julienned
1 cup sliced mushrooms
1/2 tbsp soy sauce
4 tbsp sesame oil
1/2 yellow onion chopped
3 cloves garlic minced
Cilantro and green onion for topping
Take large pan and add two tbsp of sesame oil. Add in onions and garlic then cook until golden. Then add in snow peas and cook for about three mins. Time for cabbage, carrots, and celery cook until veggies are tender and add in mushrooms and soy sauce. Continuously stir to mix well then set to side. On to the noodles! Cook noodles according to instructions, then drain and add I two tbsp sesame oil in large bowl. 
Take eggs and make very thin omelette then slice into pieces. Mix everything together and then add cilantro and green onions. Enjoy and happy Easter ❤

A throwback recipe for tonight's dinner ❤ One of my favorite go to eggplant recipes that you will definitely need in your recipe box.
Mushroom Eggplant Galore
1 large American Eggplant, quartered
1 cup sliced mushrooms 
1/2 cup chopped cilantro
1/2 tsp minced ginger
1/2 sliced white onions
2 cloves garlic, minced
1 tbsp chili paste
2 tbsp dark soy sauce
1/4 cup water
1/4 tsp sugar
Dash pepper
Take soy sauce, chili paste, ginger, sugar, and water into a small bowl. Mix together and set to the side.
Put one tablespoon vegetable oil, add onions and garlic into hot pan. Cook until golden. Add in mushrooms and eggplant. Sauté with garlic and onions for one min. Add in soy sauce mixture and cover pan for about five mins. Constantly, stir until eggplants are cooked. 
Top with cilantro and eat with brown rice!

Although it stormed last night, it turned out to be a gorgeous day for a waffle fundraiser. Cloudy days call for comfort food, what better than a nice hardy vegetarian stew? Served with a warm roll, this stew keeps you coming back for more.
Beefless stew
4 medium golden Yukon potatoes, diced into 3/4 inch
2 portobello mushrooms, 1/2 thick slices
1 pound carrots, chopped 
4 celery ribs
1 1/2 large yellow onion
4 cloves garlic, minced
1/4 cup tomato paste
5 cups water
1/2 cup parsley 
1 cup frozen green peas
1 tbsp fresh chopped rosemary 
1 tbsp fresh basil
2 tsp Italian seasoning
1 tsp paprika 
4 tbsp soy sauce
1 tsp pepper
Pinch of salt
In large soup pot, ad 2 tbsp olive oil. Add in onions, celery, and carrots. Cook for about 5-7 mins, until onions are translucent. Add pinch of salt, pepper, paprika, and parsley to pot. Afterwards add in mushrooms and garlic for about 5 mins. Next, add in water, tomato paste, rosemary, soy sauce, and Italian herb. Mix well to break up tomato paste. Bring to a boil. Once boiled bring it down to a medium and cover then simmer for 15 mins. Add peas and cook for another 5 mins or until carrots and potatoes are tender. Serve with warm them or white rice and some freshly cracked pepper. 
Optional: take 2 cups of broth and blend after peas have cooked for 5 mins. Then add blended broth back into the pot. This makes stew a bit thicker.

Once boiled bring it down to a medium and cover then simmer for 15 mins. Add peas and cook for another 5 mins or until carrots and potatoes are tender. Serve with warm them or white rice and some freshly cracked pepper. Optional: take 2 cups of broth and blend after peas have cooked for 5 mins. Then add blended broth back into the pot.
